I ended up making pumpkin pie on the Friday after Thanksgiving. I had to make something, and pumpkin pie is pretty much the #2 Thanksgiving staple after turkey. I always have a little bit of pie filling leftover and I usually throw it out but this time I made little mini pies. I had enough for about eight of them! Cute huh?

Very cute! Are these the mini muffin size?
I had extra pie dough so I made mini tarts by cutting little circles of dough and putting a tiny dollap of jam on each one before baking. They turned out really well, too.

Hermana, I thought there was something wrong with me cause I had extra filling. I chucked it, que boba!!! I love your mini pies! Are they just about bite size? Did you make your own dough or cut up a regular one into little circles? Way to go!

I made these in a standard muffin tin, although I probably could have done them smaller and made more.
