Want gooey and sweet? Coconut macaroons are sure to sooth the craving. These cookies are way too easy for how good they are. They look fancy enough to serve at a cocktail party, and they're fun enough to have as dessert after casual barbecue. Try them! If you're a coconut-nut, you'll love them.
Ingredients:
1 (14 oz) can sweetened condensed milk
1 egg white
2 (7oz) bags flaked coconut
1 tsp vanilla extract
1 1/2 tsp almond extract
Preheat oven to 325 degrees. Combine condensed milk, egg white, vanilla and almond extract. Add coconut and mix until all ingredients are well blended. Drop rounded teaspoonfuls onto greased cookie sheet and flatten each mound slightly with back of spoon. Bake 15-17 minutes until browned. Cook on cookie sheet.
You know me and COCONUT! I'll drink it, put it in rice, on cakes, on shrimp, on chicken, in soup, in my hair, in exotic frozen drinks, I'll even slather it on my dry skin here in the desert. So, I think I'll have to try these macaroons!!!
